Australia introduced me to baked beans, and I love it ever since.
Living in Canada, baked beans come out cans ??? I never prepared them myself.
The other day I shared how my husband asked me to make bean soup, I asked him to soak the beans, and he soaked 2 whole bags, which obv. too much ???
So I turned some into baked beans
Mine isn’t with tomato paste, so it’s not reddish. They came out like canned maple baked beans, sweet.
5 c soaked drained mixed of red kidney beans and black eyed. Pressure cooked to soften.
3 c of vegetable broth
1 onion, diced
3 garlic, minced or thinly sliced
3 tbsp each soy sauce, Dijon mustard, apple cider vinegar
2 tbsp maple syrup
1 tbsp corn syrup
1/2 heaping tsp chili flakes
1/2 c BBQ sauce
Brown onion and garlic in 1 tsp olive oil, then dump into Crock-Pot
Place other ingredients into Crock-Pot, mix, and cook on high for 3 H
In a bowl mix 1-2 tbsp cornstarch with 3-4 tbsp water. Stir this mixture into crockpot to thicken baked beans
Scrambled Tofu
1 block tofu, drain
1/2 of an onion, thinly sliced
2 garlic, thinly sliced
Vegeta powder to taste
Kala namak (black salt) a pinch or two
Freshly cracked black pepper
Teeny tiny pinch of turmeric powder
1 tbsp olive oil
Heat oil, saute onion and garlic to soften
Crumbled Tofu and stir in

So a pot of soup, a pot of baked beans, sausages and pepperoni came out of the kitchen ???????????
Pressure cooked 2 c of mixed soaked beans above, until soften. Drain, set aside.
Sausage
1/2 cup cooked mixed beans, mashed with fork
1 cup water
1 tbsp each olive oil, soy sauce, maple syrup
1 1/4 cup vital wheat gluten
1/4 cup nutritional yeast
2 garlic
1 tsp each paprika, dried sage
Freshly grated nutmeg (about 1/2 tsp)
A pinch of cayenne
1/2 tsp each dried thyme, dried rosemary
1 tsp whole fennel seed
Freshly cracked black pepper
Using mortar and pestle, process garlic, fennel seeds, thyme and rosemary
Preheat your steamer (bring water to boil)
In a bowl, mix your beans and the rest of the ingredients with a fork (I kinda knead it too. Some people said making Seitan when it’s too bready the end result, it’s due to too much kneading tho, so watch out)
Shape into 6 logs and wrap tightly in aluminum foil
Steam for 40 mins
Cool to room tempt before unwrapping
You can serve them as is or fried-sweetened.

‘Fried’ Sausage:
For 3 breakfast sausages, you will need
2 tbsp water
1 tbsp maple syrup
Heat til bubbly, add in sausages and coat, cook until caramelized
Serve immediately
