All measurements were just roughly I dont use measurement much when making rendang. I didnt use galangal for this one and to my surprise, it tasted still like regular rendang.
2 kg beef cubes
1 medium large onion
3 large shallots
5 garlic
1 tbsp pepper flakes
1-2 cm ginger root
1-2 tsp ground turmeric
2 tsp ground coriander
1-2 tsp garlic powder
salt as needed
2 stalks of lemongrass
5 kaffir lime leaves
water as needed
cooking oil as needed
coconut powder 1-2 cups
1/2 tbsp brown sugar or as needed
Place all ingredients into a food processor, add in amount of oil, blend to mix into a fine paste
Heat oil in a wok, brown meat lightly, set aside
Preheat the wok, saute the fine paste, add in lime leaves and lemongrass
Add in beef and a bit of water and mix well, bring to boil
Add in coconut powder and more water as needed
Cook until tender, thickened, caramelized
Beef Rendang
