Good Morning!
Yesterday the weather was sooooo funny. Sunny for an hour or two, then became so windy and cloudy, then turned to dark, and suddenly snowing. Arrggh meh π Super light though, that they melted right away. On and off the weather was like throughout the day. However, I am sure a lot of parents were relieved as the weather was nicer for Easter egg hunt, compared to previous year’s. White bunny blended super well with the white snow, hard to catch it π
I spent most of my morning repotting my seedling as they are getting big now. Used up 3 large bags of soil, and my oldest helped me. Then I prepared Tiramisu for our dessert. All in all, it was a good Saturday. How was yours?
Today’s recipe is another simple recipe, and it’s enough for 4 people π

A bunch of baby carrots
250 g lean ground beef
1 tbsp unsalted butter
1 can of green beans
50 ml water
Chicken bouillon powder, to taste
1/2 Nutmeg
Sweet soy sauce, to taste (kecap manis)
Vegetable oil for greasing
2-4 large potatoes
200 ml milk
2 eggs
Chicken bouillon powder, a generous pinch
Grated cheese, as much as you like
Peel and grate super thinly the potatoes, soak in water
Using a food processor, chop baby carrots, either finely or roughly, set aside
Drain canned beans, set aside
On a pat, brown beef in butter until juice gone, then add in carrots and green beans. Pour in water and season with chicken bouillon powder, grated nutmeg and sweet soy sauce
Grease a round or square Pyrex with vegetable oil
Drain potatoes and lay some on the Pyrex. Spread beef mixture, then top with the rest of the potatoes
In a bowl, beat eggs into milk, seasoned with chicken bouillon powder. Add in grated cheese
Pour milk mixture into Pyrex, bake on preheated 350 F for 40-60 minutes (until potatoes tender). If needed, cover with aluminum foil so cheese don’t get burned before potatoes tender
Slice and serve π
