Starting today until Thursday, I will be sharing cookies recipes ๐ Just 3 cookies though, hope you won’t get bored seeing cookies out in rows ๐ It’s near end of fasting month. I’m preparing cookies for our feast, for Eid Ul Fitr ๐ Normally I would bake Nastar (pineapple tart) and Kaastengel (cheese cookies), but this year I decided to bake Spritz cookies instead. Something different ๐
For today’s Spritz cookies, I have what we would call as Sagu Keju. Originally, the cookies use sago flour. Can never find them here in Canada, so I always use tapioca starch when I feel like baking it ๐
I do have to mention, Indonesians would use Edam instead Gouda (I like using Gouda, more affordable), and in Indonesia, we would use Cheddar for topping. While in Canada we definitely have cheddar cheese, the end result after baked, Indonesian cheddar doesn’t melt, it stays as is and lovely browning, however in Canada, our cheddar will melt during baking, regardless white or orange cheddar. That being said, any kinds of Indonesia-style cheese cookies that I made in Canada, while texture and flavor wise similar, the look is always different, as again, cheddar in Canada, melts ๐

250 g tapioca starch
60 g AP flour
120 g unsalted butter
80 g vegetable shortening
50 g berry sugar (superfine/castor)
50 g icing sugar
1 egg + 1 yolk
150 g Gouda, lactose free, grate
Grated cheddar cheese, for topping
Mix starch and flour in a bowl, set to side
Preheat oven to 365 F
Cream butter, shortening, and sugars, until completely combined, then cream in egg and yolk
Stir in grated cheese, followed with flour mixture, until completely combined
Pipe cookie dough onto greased baking pan, and bake cookies for 15 mins
Cool on cooling rack before storing

Semprit Sagu Keju
Ingredients
- 250 g tapioca starch
- 60 g AP flour
- 120 g unsalted butter
- 80 g vegetable shortening
- 50 g berry sugar superfine/castor
- 50 g icing sugar

- 150 g Gouda lactose free, grate
- Grated cheddar cheese for topping
Instructions
- Mix starch and flour in a bowl, set to side
- Preheat oven to 365 F
- Cream butter, shortening, and sugars, until completely combined, then cream in egg and yolk
- Stir in grated cheese, followed with flour mixture, until completely combined
- Pipe cookie dough onto greased baking pan, and bake cookies for 15 mins
- Cool on cooling rack before storing
