I baked 3 kinds of Spritz cookies yesterday, made me happy. If I didn’t run out of butter, I would have baked at least 1 more flavor 😁 I think 3 flavors are enough, for 4 of us. We don’t have relatives nor neighbors who celebrate Eid Ul Fitr here in Canada, so we never baked bazillion cookies to serve anyone but ourselves 😁
For today’s recipe share, this cake comes in many varieties, sometimes 2 layers, sometimes 3 layers. Depending what the layers are made of, they have different names too, however, they are all referred as Wadai Ceper, due to the round or square pan.

1st Layer
125 g glutinous rice (3/4 c + 2 tbsp)
100 g rice flour (1/2 c + 2 tbsp)
150 g sugar (3/4 c)
1 tsp pandan paste
1 can coconut milk (400 ml)
250 ml water
A pinch of salt
2nd Layer
125 g glutinous rice
100 g rice
150 g brown sugar
2 tbsp sugar
1 tsp vanilla essence
1 can coconut milk
250 ml water
A pinch of salt
Mix everything, then pour into a square pan that’s been lined with banana leaf. Steam for 10-15 minutes
Prepare the next layer. Mix everything until combined, then pour half of it onto the pandan layer on the pan. Steam for 10-15 minutes, then pour the rest of the batter. This time, steam for 15-20 minutes
Cool cake completely before slicing. I flipped the cake, so bottom layer to top, and vice versa 😊
