I had a very busy day, yesterday. Accompanied my youngest for a biopsy, then went to hospital’s lab for my oldest’s appointment. Then spent quite sometime on the phone, waiting in the queue, to book another appointment. Today is less crazy, since it’s my husband’s turn to do things ๐ When you have kids, hey ๐
So, since I wasn’t home for most of the day, I only managed to prepare jelly for breaking the fast. The wonderful thing about agar-agar jelly, source of fiber, doesn’t take long to prepare and to set firm, and you can add in anything you like, flavor it anyway you want, serve it as is or with sweet sauces, easy and delicious.
Like this following fruit cocktail jelly. Refreshing regardless it’s still Winter here, so imagine in warmer climate, SUPER cooling ๐

796 ml fruit cocktail
250 fruit juice
650 water
1 envelope of agar-agar powder
Social tea biscuits or digestive biscuits
Strain juice from fruits, pour into a pot. Add in agar-agar powder, water, stir, and bring to boil
Spread fruit in jelly mold, then slowly pour in agar-agar liquid, let stand for 8-10 minutes, surface will somewhat firming up
Lay some biscuits on the very top, then chill until totally firmed up. Slice and enjoy.

Ingredients
