I’ve been up since 4 AM. Does full moon really causing uneasy night? My husband seems to think so. I’ve been sleepless much since forever, but it’s always worsen whenever the moon is rather big, rather bright, rather full it feels 😅
I was talking to my younger sister about the theory of full moon, and she said “wow, maybe you’re a vampire”. Then I said, no, full moon is werewolf. Then I joked to her, “if bitten by a bat you turn into a vampire, by a wolf, is werewolf, by a spider, you become Spiderman, then how come by a mosquito, all you’d become is “lumpy” (papule, I know) – but we joked in Indonesian, the word is much funnier/sillier (which is bentol-bentol) 😁 So I was success in making her choked on her laugh 😁
Anyhoo! This following omelet can make one keeps adding warm rice to one’s bowl. Simple and tasty!

12 eggs
Pinch of salt
4 green onion
1/2 large onion
4 garlic
2-3 tbsp cornstarch
Enough water
1 tbsp peanut oil
1 can of sliced mushroom buttons
1 can of mixed veggies (green beans, peas, corn, carrots)
400 ml water
Ketchup, sugar, vinegar, salt to taste
In a small bowl, dilute cornstarch in enough water
Slice green onion, onion and garlic, thinly, separately
In a bowl, beat eggs with a little salt and the green onion
Heat pan, brush with peanut oil, turn beaten eggs into 3-4 omelets, set to side
Heat pan with a little peanut oil, saute onion and garlic til softened, stir in rinsed canned veggies, cook for a minute or two
Pour in water, add ketchup, salt, sugar, vinegar, you want to achieve sweet and sour flavor
Cook til bubbling, then pour in cornstarch, stir quickly
Pour sauce onto omelet, serve immediately with warm rice
