Hello!
I have an odd cake to share today, because it is using LETTUCE!! 😁 Don’t knock it til you try it! I know the sound of it is giving you WTF vibe, but the cake is seriously moist and develops more flavor when served the next day. My youngest loves it 😁
I mean, what’s not to love, it’s sugar overload 🤣
Well, there’s carrot cake, tomato soup cake, avocado cake, lime cake, pumpkin cake, beetroot cake, so why not lettuce cake, right? 😉

1 1/2 c strong baker’s flour
2 tsp BP
1/2 tsp Bsoda
1/2 tsp salt
1/8 tsp allspice powder
1/8 tsp ginger powder
1 c fine chopped/sliced lettuce
A handful of walnut
1 large lemon
1/4 c peanut oil
1 c sugar
2 eggs
1 1/2 – 2 1/2 c icing sugar
1 tbsp unsalted butter
Juice of the lemon
Mix dry ingredients in a bowl, set aside
Roughly chop walnut, set aside
Grate lemon peel, set aside
In a bowl, mix sugar and oil using electric mixer, and mix in half of the grated lemon peel
Then add in half of the flour, top with half of the lettuce, then the rest of the flour, followed with the rest of the lettuce
Add in eggs, one at a time, then fold in chopped walnut
Dump and spread mixture onto pan, bake at preheated 350 F for 25-30 mins
Cool cake to room temperature
Mix icing sugar, lemon juice, the rest of the grated lemon peel, and unsalted butter, then pour mixture on cooled cake
Let icing set before slicing. Best if served the next day!

Ingredients
