Woke up to a warmer temperature, yay. Only -31C as opposed to -40C (yesterday’s). Still freezing cold, but at least a tad warmer 😅
BTW! Did you get to watch Meteor Garden, this Taiwanese TV Series in early 2000? I think maybe, 2001? I was still in uni at that time and really hooked on the series. Anyways! The actress who played the main girl character passed away yesterday 💔 May she rests in peace 💜
Moving on to recipe sharing. Today I have a fluffy muffin to share.

2 c fresh cranberries
2 tbsp icing sugar
2 egg
1 c sugar
1/2 c sour cream
1/2 c heavy cream
1 tbsp vanilla essence
1 1/2 c strong baker’s flour
1/2 tbsp BP
A pinch of salt
1/2 tsp BSoda
1/3 c + 1 tbsp cocoa powder
Chop cranberries, mix with icing sugar, set to side
Mix wet ingredients until completely combined, set to aside
Mix dry ingredients until completely combined, then mix with wet ingredients, mix until just combined, folding in cranberries
Bake on preheated 350 F 20-25 mins
Cool on rack and enjoy!
