How’s everyone doing this morning? We’ve been having non stop flurries and sometimes heavy snow falling, since Thursday night. It’s been crazy here. The wind make it worse. Without the wind, my husband would be willingly shovel the snow every other hour, however since it’s been windy as hell, he’d rather not, and what that means? Mountain of snow on driveway, by the door, pedestrian walk, everywhere as far as the eyes can see 😁 Normally he would also clean the neighbor’s driveway, but not for now, Satan, it’s too windy even with full face mask on, he said 🥶
And tomorrow is Monday. I so don’t wanna get out of bed since this weather will continue til next week 🥴🥴🥴🥴
For today’s recipe share, it’s my youngest’s favorite. We can have it throughout the day and you can fill it with whatever you feel like. I like the skin as is TBH, no need filling at all 😁

6 eggs
1 tbsp vanilla essence
1 c milk
4 c strong baker’s flour
A pinch of salt
3 tbsp sugar
6 tbsp peanut oil
6 c hot boiling water
Filling of your choice (jam, Nutella, chocolate malt drink powder, etc)
In a food processor, mix eggs, essence, and milk until completely combined
In a bowl, mix flour, salt, sugar, then pour in eggs mixture and stir in peanut oil
Pour in hot boiling water, 1 c at a time, then strain mixture
Let rest at room temperature for an H or at least 20-30 mins
Stir before cooking
Brush pan with unsalted butter lightly, then pour a ladle of batter, make thin pancake (almost like crepes), cook for 2-3 mins, no need to flip
Lay a skin on a plate, spread filling of your choice, roll and serve
Enjoy!
