Happy Blizzard Day!
Yep, blizzard since 7 AM earlier. Lovely, but not fun for those who go to school, to work, to everywhere that requires you to step outside the house 😁 My youngest even said, mommy, please don’t let me walk in the blizzard. I said to him, don’t worry, baby, I’m driving you right to the entrance door 😁
For recipe sharing today, they just came out of the oven! Right now they are cooling on the rack 😊 Nutella Muffins, using my go to muffin base recipe 😊
2 c strong baker’s flour
1 tbsp double acting BP
A pinch of salt
2 eggs
1/2 c sugar
1 c milk
6 tbsp peanut oil
1/2 tbsp vanilla essence
12 tsp Nutella
In a bowl, mix flour, BP and salt
In another bowl, using balloon whisk, mix eggs, milk, sugar, vanilla, and peanut oil
Combine dry ingredients and wet ingredients, mix until just combined
Preheat oven to 400 F, grease large muffin pan
Scoop 1/4 c of batter to pan, top each with 1 tsp Nutella, then top again with another 1/4 c batter (the recipe makes 6 muffins)
Lastly, top with another 1 tsp Nutella. Using a toothpick, swirl the top Nutella, creating marble effect
Bake muffins for 15-18 mins
Cool on rack and enjoy!
