It is sooo sunny outside and WARM. Yep. Only -4 C, as opposed to -26 C we had last week 😁 We will still have white Christmas though, phew! 😁
Spent my morning baking my youngest’s birthday cake. It’s cooling now and filling is also firming up. Gonna have to tort and set up, so tomorrow morning I just have to slap some nuts and chocolates and that’s it 😁
But for now, recipe share!
Here is the last Cookie Recipe for this year’s Christmas baking, as promised 😊 Today am sharing you Peppermint Kisses 😊 You don’t like peppermint? No worries! Substitute the flavoring to vanilla, lemon, butter, milk, mocha, chocolate, anything you like, and your cookies will turn up yummy, I promise 😊 The recipe is so versatile, even without flavoring and/or topping or add-ons, you would still come up with great cookies 😊
1 bag Hershey’s kisses
1 c unsalted butter
3/4 c icing sugar
1/2 tsp peppermint extract (more for stronger, if you like!)
2 c strong baker’s flour
Unwrap kisses, place in a bowl, and preheat oven to 350 F
Cream butter and icing sugar for 5 mins, until pale, then beat in peppermint extract
Mix in flour, until completely combined
Scoop per tablespoon and place on ungreased nonstick sheet, bake for 8-10 mins
As soon as out of the oven, press kisses
Move cookies to rack and let cookies cool completely and chocolate set/no longer soft, then store
Enjoy!
