It’s lovely outside. Been windy and raining. Snow almost all turned into thin ice or melted away. I’ve been bed rest tho and can’t enjoy nothing but the pain of my belly. My surgery went well. Recovery is a witch so far 😅 Day 4 only. People said it will get better. I truly hope so, like in a blink, I hope, PLEASE 😅
I’m just happy my mother in law is here from Hungary. So boys have home meals now and then 🙂
For today’s recipe I have an awesome banana muffins, big and fluffy, even my mom in law said “please give me the recipe, so I can bake these when I go home to Hungary” 😊 I told her it’s my go to recipe for muffins, simple, big, and nice, and boys always love them.
2 c strong baker’s flour
1 tbsp BP
1 tbsp flaxseeds
A pinch of salt
1 handful walnut halves
1 handful semi sweet chocolate chips
2 ripe bananas
2 eggs
1 tbsp vanilla essence
6 tbsp peanut oil
1/2 c of milk
1/4 c packed demerara style brown sugar
Chop roughly walnut, set to side
Grease muffin pan, set to side
Preheat oven to 400 F
Mix dry ingredients in a bowl, then mix in chopped walnut
In a food processor, mix eggs, bananas, oil, essence and sugar.
Pour mixture into flour mixture, and mix until just dampened
Divide batter and bake for 18-20 mins
