Typing to you still from my comfy bed. I see bruises around my stitches today. I learned it’s normal, here is hoping that’s true for me as well 😊 How’s going?
It’s another beautiful sunny day. Next Tuesday I have to go to clinic so that they can remove the surgery staples, and supposedly that day it’s predicted to be cold and snowing. Just my luck 😅
Today’s recipe is a refreshing beef soup from Indonesia, Sop Daging 😊
600 g beef cubes, slice into smaller bites
5 large potatoes, peel and cube
Half bag baby carrots, slice
2 head of broccoli, use the florets only
1/2 head cabbage, rip or slice
Grape tomatoes
1 bunch cilantro, thinly sliced
3 green onions, sliced
1 med onion
6 garlic
1/2 c water
In a food processor, mix water, onion and garlic into a fine paste, set to side
Brown beef, add in 12 c water, bring to boil
Drop in potatoes, carrots, bring to boil for 8-10 mins
Add in broccoli, boil for 5-8 mins
Add in cabbage and onion mixture, stir to combine, continue boiling
Season with chicken bouillon powder, celery salt, and white pepper powder
Once veggies tender, stir in sliced cilantro, green onions and tomatoes, boil for another t mins
Serve with rice or pasta
