Last night the aurora was dancing like crazy. This time I caught it, thanks to my oldest’s friend. He lives a block or two from us, and he spotted the aurora and message my son. I had just gotten out of the bathtub and my son came and said aurora is beautiful pink. Not wanting to miss it, I went out with my wet hair. Yep, I washed hair last night. Didn’t get to dry it whatsoever. So yep. I’m sicker than I was previous days 😅 I’m so naughty, I know. I’m supposed to report should I am sicker 7 days before surgery. Here is crossing fingers I am less sillier and no longer sick by next week 😅🤲😅🤲
Did you get to see it last night? It was so strong all over Canada. Amazing. Pink, green, sharp, clear, beautiful aurora. The sky was lit big time and the stars were twinkling as well. Today at my oldest’s school, they are having Thanksgiving luncheon. Students/parents were encouraged to bring in desserts to share. I prepared these following cookie balls. Super easy and quick to make when you are lazy to turn on the oven. In my defense, my back is killing me since yesterday, so I decided to prepare these no bake goodies instead.
1 box of digestive cookies/biscuits
1 can of sweetened condensed milk
Chocolate sprinkles of your choice (I used Indonesian chocolate rice – made butter, chocolate, milk. I also used 2 different sprinkles I got from Walmart, the flavors were salted caramel and tropical mix)
In Indonesia we would use chocolate sweetened condensed milk as well. We would also sometimes use chocolate ganache and/or melted chocolate. In the end, we would call it chocolate balls instead cookie balls 😊
Crush digestive biscuits either with rolling pin, hands, or food processor. Place crumbs in a bowl
Mix in condensed milk as much as needed – until you can shape crumbs into balls
Roll cookie balls on sprinkles
And that is it. Easy peasy but yummo!
