2.5 c strong baker’s flour
1 tsp BSoda
A pinch of salt
1/4 tsp cinnamon powder
2 eggs
1 c peanut oil
1/2 tbsp vanilla essence
1 1/4 c demerara style brown sugar
3 small sweet apples
Cinnamon sugar, for coating
Preheat oven to 350 F
Mix dry ingredients in a bowl, set to side
Peel and dice apples
In a food processor, blend eggs, oil, sugar, and essence, then pour mixture into dry ingredients, fold in diced apples
Drop a tbsp/a scoop of dough onto cinnamon sugar, roll to coat
Place cookie balls on baking sheet, flatten a little, and bake for 8-10 mins
