Good Chilly Morning!
So windy and many golden leaves falling here and there, some trees already with no leaves in fact. Supposedly we will be seeing light snow this coming weekend. Like WTF way too early ðŸ˜
We managed to have afternoon walk yesterday at least. Guess soon it will be back to treadmill. At least for October as November will be bed rest time for me 😅 I will be bigger, wider, fatter even more, just laying down 😅
Today’s recipe is to warm our soul, nice loaded soup that you can prepare on stove top or Instant Pot 😉
1/2 of a large onion
6 candlenuts
6 garlic
1/4 c water
2 bird eye chilies
1-1.7 kg beef cubes
1 block firm tofu, cubed
1 can quail eggs in brine, drain, rinse
1 can green jackfruit in brine, drain, rinse
1 can 6 medley beans, drain, rinse
1/2-1 bag kale
1 can of coconut milk
2 cans water
3 Indonesian bay leaf (daun salam)
2 tbsp Chicken bouillon powder (or to taste)
1/4 tsp Galangal powder
1/8 tsp Turmeric powder
1/2 tsp Ground coriander
In a food processor, turn onion, garlic, candlenuts and water into fine paste
Pour paste into Instant Pot, with bay leaves, saute til fragrant
At the same time, brown beef cubes on a separate pot
Drop in browned beef into Instant Pot, stir
Add in the rest of the ingredients, pour in coconut milk and water, season and stir
Add in kale, stir
Cover Instant Pot with lid, choose soup/broth option, for 30 mins
Release steam/air, take off lid, stir in more fresh kale. Cover and cook for another 30 mins
Serve as is or with warm rice!
Sayur Gori (Nangka)
Ingredients
