How’s you doing? Friday is here at last, hey 😊 It’s sunny here but chilly. Supposedly next week we will be seeing a lot of rain. Autumn is in the air indeed. I am sad 😅 The Farmers Almanac also says we are looking for a wet long extreme Winter….which is nothing new on that 🤣 Last year was warmer tho than the previous year due to El Nino…or was it La Nina…I just don’t know anymore 😅
Anyhoo. For today’s recipe, I have an awesome muffin recipe. It’s chocolate and all around wonderful. Cocoa muffins with chocolate streusel topping 😍
2 c strong baker’s flour
1/2 c sugar
A pinch of salt
2 tbsp cocoa powder
1 tbsp BP
1/2 c strong baker’s flour
1 tbsp cocoa powder
1/4 c dark brown sugar
45 g unsalted butter
1/2 c mini choc chips (more or less is up to you)
2 eggs
1 c milk
6 tbsp sunflower oil
1/2 tbsp vanilla essence
Mix flour, BP, cocoa, salt, and sugar in a bowl.
On another bowl, mix butter, flour, sugar, cocoa, until coarse texture, then mix in mini choc chips.
Preheat oven to 400 F and grease muffin pan with melted unsalted butter.
In a food processor, mix egg, milk, oil, and essence til completely combined, then pour into the 1st bowl, mix until just combined.
Divide batter and top generously with 2nd bowl mixture.
Bake muffins for 18-20 mins
