Another super windy day we are having here in Northeast BC. Did you get to see the Sturgeon moon last night? Despite the strong chilly wind, my youngest and I managed to take a couple of pictures of the moon 😊
Today is also smokey tho and sky is gloomy. I so hope later in the day it would be nicer, here is crossing fingers.
For today’s recipe share, I have an Indonesian dish that refer it as Fu Yung Hai. It is Chinese influenced, from Egg Foo Young dish. Sometimes we would add seafood esp crab meat in it and/chicken. Most of the times we use sweet peas in the sauce. Today’s tho, more like vegetarian Fu Yung Hai. The super simplest of 😊
8 extra large eggs, beaten, season with a pinch of salt
A bunch of baby carrots, slice
A bunch of sweet snap peas, slice
2 tbsp sunflower oil
3 garlic, thinly sliced
Ketchup, sugar, apple cider vinegar (or regular white vinegar), to taste
Water, as needed
Brush nonstick pan with a little butter, make 3 omelets of the beaten eggs, set to side stacked.
Heat oil, saute garlic til fragrant, stir in washed and sliced baby carrots and sweet snap peas, cook for 2 mins, then season with ketchup, vinegar, sugar, and pour in a little water (more or less, thick or thin sauce is up to you). You want to achieve sweet and sour sauce.
Pour sauce on omelet, slice, and serve with warm rice. Enjoy immediately 😊
