Another smoggy day here, another cooler day as well. It rained yesterday, but I don’t think it will rain again today. You never know tho. Weather prediction is just that, a prediction, it can be yes, it can be no, and if you make a mistake in predicting, somehow you still get to keep your job ๐โ๏ธ๐โ๏ธ
We haven’t moving forward yet with front yard and/or greenhouse. Weekdays always busy, and then the weather isn’t friendly. We will get there one of these days ๐ Just hopefully, before snow falls ๐คฃ I so want those to be done this year ๐
I was missing everything peanut sauce. Indonesia has a lot of dishes that use peanut sauce, which I miss from time to time, yet too lazy to make them as they require a lot of ingredients and labor time ๐ So when I miss peanut sauce and I have peanut butter at home, cheater peanut sauce it is ๐
1/4 of a purple cabbage head
1 can corn kernels
1 can 6 medley beans
2 carrots
Grape tomatoes
3 heaping tbsp smooth peanut butter
Garlic powder to taste
Onion powder to taste
Boncabe (flavored pepper flakes) to taste
Lime or lemon juice to taste
Sweet soy sauce (kecap manis) to taste
Rinse cabbage and slice thinly, place into a large bowl.
Drain and rinse beans, add them into the bowl.
Drain the corn and add them into the bowl as well.
Using food peeler, make carrot ribbons, and add them into the bowl, along with as many as grape tomatoes you like. Mix well.
You can serve the salad with any dressing you like. I divide them into 4 containers. 1 portion I served it as is, 1 portion with ginger dressing (store bought), 1 portion with coleslaw dressing and 1 portion with peanut sauce. These portions were served separately on different meal time ๐
For the peanut sauce, mix all ingredients in a bowl, and that was it ๐
