Hello!
Yesterday my husband and I grabbed 20 bags of soil, and yes, finally we were able to build the raised beds frames, 2 of them. We managed to replanted the 2 haskaps I got more than a month ago, dug up 2 currants we planted 3 years ago and replanted them in the same raised bed as well ๐ Hopefully today we can do the same for the bazillion raspberries we got ๐ Raspberries spread, that’s the one thing I like. I don’t have to buy new plants to have a lot, unlike currants and haskaps. Should a raspberry fall on the ground, it will grow as a new plant. That being said, they have taken over the garden and getting messy. So yep, that’s why I wanted to move them ๐ I’m so excited for things going in motion as I so cannot wait to redo my front yard before Winter comes ๐
It’s somewhat smokey still at the moment. Yesterday was much better than the previous day, hence we gardened ๐ Today, so far so good, so yep, raspberries ๐ค๐ค๐ค๐ค
How about you? Do you have any exciting plans to do today? ๐
Before I leave my comfortable bed and start my day. Here is a recipe for the day ๐ Blueberry Puff Pastry, easy no hassle dessert ๐
1 box puff pastry, defrosted/thawed in the fridge overnight
5 c frozen blueberries
1 c sugar
1/8 tsp citric acid
2-4 tbsp cornstarch (read instructions below)
1/4-1/2 c water (read instructions below)
1 yolk
Bring blueberries, sugar, citric acid to boil, stirring occasionally
Using 1/4 c cup measurement, mix 2 tbsp cornstarch and fill water, do this twice, then pour into blueberries, stir. It will thickened.
Cool blueberries to room temperature
Roll flat puff pastry (2 sheets) and make 4 (bigger) hand pies, with heaping 1/2 c of blueberries each, as the filling. Rerolled scraps. I managed to make 5 puff pastry/pie in the end.
Poke holes and brush with egg yolk
Bake for 30 mins, til golden brown, on preheated 375 F
Serve at room temperature or slightly warm out of the oven
Enjoy!
