It’s nice and sunny outside. I went to bed forgetting to check whether my indoor/outdoor kitty was home or not, last night. This morning, my oldest went to my room at 4 AM (I’ve been up since 3 AM) and said he woke up as he felt hungry ๐ I told him to grab buns from the kitchen and help himself. He returned later on to let me know that Furball (the indoor/outdoor cat) was just coming home, sitting by the balcony door, and I was like, oh crap, I forgot to make sure all the animals were inside before bed ๐ Lucky it’s not Winter, hey. Phew.
Oh! Guess what, guess what, guess what ๐๐๐๐ I went to dentist yesterday for regular cleaning, and learned that the dentist and the assistant subscribed to my YouTube channel ๐ฅฐ๐ฅฐ๐ฅฐ๐ฅฐ Thank you, Accent Dental peeps, you guys rock! โค๏ธ
For today’s recipe, I have a muffin recipe to share (yep, been awhile ๐๐๐๐)
2 c flour
1 tbsp BP
1/2 c sugar
2 tbsp matcha powder
A pinch of salt
2 eggs
6 tbsp sunflower oil
1 c milk
Marshmallow fluff
Melted unsalted butter
Preheat oven to 400 F
Brush cupcake pan with melted butter, set to side
In a bowl, mix flour, baking powder, sugar, matcha, and salt, until completely combined
In a food processor, mix milk, oil, and eggs, then pour into dry mixture. Mix until just combined.
Spoon some batter onto cupcake pan, top batter with marshmallow fluff, then top again with batter, and lastly, top it again with fluff
Bake muffins for 18-20 mins
