Hope this finds you well. It’s 9 AM at the moment, and I have been up since 2 AM 😫 I am not taking allergy meds orally anymore, just nasal spray. I really thought this issue would be gone once the allergy pills gone, but nope. I’m so exhausted. Been 2 weeks now 😫 What could cause it 🤔 The blinds problem is fixed, no more sunshine in. Allergy meds done by yesterday. No change in sleeping time, diet, lifestyle. Yep. Idk what’s causing this sleepless nights. I am not writing thesis, either. So I should be sleeping like a baby 🤔😅🤔😅
Ah well. If you don’t hear from me for more than 2 weeks, you know what that means.

For today’s recipe share, of course it’s another muffins. I did give a heads up that I will be posting bazillion muffins recipes 😁 Easy to prepare and make a great school goody to be packed for lunch bag for my sons 😊
Today, it’s Vanilla Birthday Cake flavor 😊 I used little beads (hundreds and thousands), but colorful sprinkles work as well. I mean, normally in cake, we would use the colorful sprinkles. I felt like using little beads instead as I have another flavor idea in mind that will use the colorful sprinkles, for future muffins 😉
2 c flour
1 tbsp BP
A pinch of salt
1/2 c – 1 tbsp sugar (yep 1/2 c MINUS 1 tbsp)
2 heaping tbsp little beads (hundreds and thousands)
1 envelope vanilla sugar
1 c milk
2 eggs
1 heaping tbsp + 1 tsp vanilla essence
6 tbsp vegetable oil
Extra little beads for sprinkling
Grease muffin pan with melted unsalted butter, set to side
In a bowl, mix flour, BP, salt, little beads, and vanilla sugar until fully combined
In a food processor, mix milk, eggs, essence and oil until foamy, then pour into dry ingredients, mix until just combine, do not over mixed
Pour batter into prepared muffin pan and bake at preheated 400 F for 18-20 minutes
