I feel blue 😫 Yep. Cloudy and cold morning. Meh. What a great weekend 😅 Last night I said to my oldest, “Tomorrow (which is today) please pick some dandelion florets for me. I’m going to make jelly”. But now with this super cloudy and cold day, I just wanna stay in my bed, which is what am doing atm. Typing to you from under my blanket 😅 In my defense, breakfast already served, laundry already done earlier, no dishes to do, and iRobot is sweeping around the house right now. So, really, under blanket for me it is 😁✌️😁✌️
Guess lilac and dandelion jellies have to wait. I truly have no spirit when it’s cloudy. I am so needing tons of Vitamin D.
I even planned to make either cinnamon rolls if not doughnut. My husband did cut the grass last night. I said to him, there you go, it’s gonna rain now. Seems like whenever he cuts the grass, rain follows suit not long after 😅
Anyhoo! I baked this following bread pudding for the boys. No Baileys this time 😉
1/4 c unsalted butter, melt
2 eggs
3 tbsp coconut sugar
1/2 tbsp vanilla essence
2 c milk (more or less is depending how many buns you want to use)
6-8 hamburger buns
1 handful toffee bits
1 handful dark choc chips (or semi sweet)
Grease 9 inch pyrex with melted butter, set aside
Beat eggs sugar, essence and milk until completely combined
Tear up burger buns and place it on pyrex, sprinkle with toffee bits and choc chips
Pour in milk mixture, chill for an H if not overnight
Bake on preheated 400 F for 30-45 mins
Take out pyrex from oven, let stand 8-10 mins, slice and serve
