Good Wet Morning!
Was raining all night long. So wet outside and yet as soon as I opened the window (as it’s so humid!), I could hear people cutting grass. Won’t that be hard to do, cutting wet grass? I never tried.
So 3 days ago I saw a job posting on my email, and I applied, just to see my luck as the posting said preference would be given to French speaking applicants. I have basic French, so I’d give it a go, I thought. They called me for an interview and I went yesterday. Holy moly, I truly need to brush my French 😅 Mind you, the last time I spoke French was in 2008. Yikes! I’m so silly 😅
What was I thinking anyways, I planned to look for a new job not until Summer break is over. It hasnt even started yet. However since I saw that posting, saw the start date would be September, and hey! I have basic French, so I tried 😁
Finally, lilac jelly is made! After mentioning back and forth on the last couple of postings, here it is 😍
2 c of lilac florets
2 c hot boiling water
3 tbsp lemon juice
1 pouch liquid pectin
4 c sugar
Steep florets in hot boiling water for overnight, strain and discard florets. Liquid will change color from purple to browning.
Pour liquid into a pot, add in lemon juice and pectin, stir to combine, bring to boil. Once it starts boiling, stir in sugar til dissolved and being it back to fully boil, cook for 10-15 minutes until setting point. Once awhile stir mixture and scoop out foam.
Meanwhile, bring water in a large pot to boil. At the same time, boil lids of the jars in another separate pot.
2 mins before 15 mins is up for the jelly, rinse jars and keep it wet. Using microwave, sterilize jars by heating it at full power for 1 minute.
Take out jars, turn of stove, and pour jelly into jars. Cover with the hot lids tightly, then place filled jars in hot boiling water of the large pot, boil for 15 minutes.
Take out jars and place on clean dry kitchen towels, let stand to room temperature.
Great for toast, English muffins, and croissants too 😊
