Hope this finds you well. I am loving the sunny morning at the moment, altho I wish I could sleep more. For 2 days now, I can’t stay sleep for 8 hours, not sure why. Every a couple of hours I would wake up, reach my phone, check the time and try to go back to sleep, over and over again. Pretty tiring. I’m thinking it could be the new meds I got, but am not sure 🤔 I’m just glad that I am a stay at home mom for now, though, since I have time for naps on weekdays 😁✌️😁✌️
Last night I baked the following muffins. My recipe always makes 6 large muffins. With 2 boys at home, they only last until Wednesday. So I always have to bake new muffins for the rest of the weekdays, and I always try to bake new flavors so they don’t get bored eating them and I don’t get bored baking them 😄 We are trying not to get storebought snacks much, not just due to crazy prices these days, but also more and more crazy news on recalled foods, forever chemical, and whatever unhealthy sneaky ingredients companies use 🫤
That being said, I hope you won’t get bored with muffins recipes 😁
2 c flour
1 tbsp BP
A generous pinch of salt
1/2 c sugar
1 c milk
6 tbsp canola oil
2 eggs
3 lemon juice
1/2 c full, frozen blueberries, rinsed
Mix dry ingredients in a bowl
Using food processor, add oil, milk, juice, eggs, blueberries together, and pulse to smooth liquid
Pour liquid the bowl of flour mixture, fold til just combined
Grease muffin pan, pour batter per 1/2 c, top with a couple of rinsed frozen blueberries
Bake muffins on preheated 400 F, for 18-20 minutes
