Happy Sunday!
Sun is sooooo hot at the moment. I have been sunbathing since 10 AM, well on and off, in between watering plants and whatnot. It is so beautiful outside. Supposedly it will be raining sometime tonight if not at dawn time, though.
There was a huge fire started not too far from downtown. We could see the dark smoke from the boys school on Friday. Made us worried big time. Happy the firefighters could contained it and as of today it’s declared under control. Phew. It’s always giving you a heartattack whenever it’s too close to town 😫
Back to my sunbathing story. In between watering plants, tidying up backyard, I also managed to bake muffins for school. However, for now, am sharing the following savory pancake 😍
1 1/2 c flour
3 tsp BP
A pinch of salt
A pinch of garlic powder
A pinch of sweet paprika powder (edes paprika)
1 1/4 c milk
1 egg
1/4 c melted unsalted butter
Left over ground beef from savory muffins we made the other day
Mix flour, salt, garlic powder, sweet paprika powder and baking powder in a bowl, make a well on center.
Pour in milk, crack in an egg, and add in melted butter, mix, then add in cooked ground beef. Mix until completely combined.
Preheat pancake maker and brush surface with unsalted butter. Drop batter per 1/2 c, cook for 2 mins, flip, and cook for another 2 mins.
Serve immediately or at room temperature, as is or with ketchup or Sriracha. So good!
