Another sunny morning altho a little damp on road and grasses. Must have been raining a tad last night or sometime before I woke up 😁
Yesterday I replanted my tulips from front yard to pots. I also repotted my Thai banana, aloe plant, and planted some turmeric roots. My husband said he’s gonna build me another raised bed, so that I can replant my peonies from front yard to back yard 😊 I can’t wait. I also wanna move my bleeding hearts, ferns, narcius, hydrangea and roses. If we truly gonna have work done on the front yard, I’m saving my plants first 😁
I wish raised bed could be done tomorrow but I have fundraiser for the library event to organize and attend to, so raised bed has to wait next weekend 😊
This morning I am sharing one of our favorites, bittergourd stir fry. Hopefully my husband and I can live up to 100 years old 😁 We’ve been consuming bittergourd for years, in fact I have been consuming since I was a teen, and a couple of years back we learned, the Okinawan live up to 100, since they consume healthy foods, which one of them is bittergourd 🥳
2 large and long bittergourd
Enough salt
1 onion
4 garlic
6 bird eye chilies
2 tbsp peanut oil
1 bag of cooked shrimps (frozen)
Season with Vegeta powder (or Royco)
Halve bittergourd remove seeds, then slice thinly. Place into a large bowl. Sprinkle with generous salt, rub and squeeze until bittergourd produces liquid. Set to side for 30 minutes
Meanwhile, slice garlic onion and chilies
30 mins up, rinse bittergourd
Heat oil and saute onion, garlic, and chilies slices until softened and fragrant
Stir in rinsed bittergourd, stir fry for 2 mins
Stir in shrimps and season with Vegeta powder, cook until shrimps soften
Serve warm as is or to accompany warm rice
