Good Morning Friends!
Yesterday my husband and I were stuck inside my car due to 2 large roaming dogs. They had no collars on, we didn’t know if they were sick, friendly, or what. They looked like German Sheppard, but really big. They seemed lost, but since we didn’t know their situation, we couldn’t risk it. Then I saw 2 little girls walking toward us and the dogs went to them. I quickly got out of the car, and at the same time the girls screamed. I told them to stop screaming, walk slowly toward me, try to calm, and I opened the back door of my car. I told the girl if they’d like to, they can sit in the car to be safe. Then one of the girls said “it’s okay, we live nearby”. Only then it hit me, I sounded like a kidnapper maybe 😅 Stranger danger, when what I really wanted to do was to help them from the dogs 😅

One time, 3 years ago, in Winter morning, still dark. I think I have shared this awhile back. A truck stuck in the snow bank not too too far from my sons school. Once I dropped them off, I took the same route heading home and saw it was there still. I got out of my car!!! Offering help and came out drunk guys telling me to get in their truck while they push the car out. Like the fuck. Who would on their right mind do that. Out of your car in the pitch dark, was my 1st mistake. Trying to be a helpful human was my 2nd. I mean, in today’s world, almost everyone owns a mobile phone. If they really needed help, they could call for a help. Don’t get out of your car and get yourself in trouble, whosthekitchenfairy! 🤣
Anyhoo!
I packed the boys these muffins yesterday, and when they got home from schools, they raved so much how the muffins were different and super good. Yes, that’s the words they used, super good. They want me to bake more of them. When I told them the muffins were inspired by Indonesian traditional cake called Klepon, my youngest quickly said, “I don’t want the muffins! Please make me the real cake. I wanna try” 😊
If you have been following me for awhile, you’d notice all my muffins almost similar one to another. From 1 basic recipe that I am truly fond of, I just mix and match ingredients and bake various muffins 😁
2 c flour
1/2 c sugar
1 tbsp BP
A pinch of salt
1 c milk
2 egg
1 tsp pandan paste
6 tbsp canola oil
2 tbsp unsweetened desiccated coconut
Filling and Topping
Harden brown sugar (or brown sugar cubes)
Maple syrup
A small bowl of unsweetened desiccated mixed with a generous pinch of salt
Mix dry ingredients in a bowl, set aside
In a blender/food processor, blend milk, oil, eggs, and pandan paste. Pour mixture into dry ingredients, fold twice, then add in coconut, mix until just combined
Pour 1/4 c of batter into greased large muffin pan, give a brown sugar cube on each, then pour in another 1/4 c onto
Bake for 18-20 mins on preheated 400 F
Take our muffins, dip top on maple syrup, then dip top on salted coconut

Klepon Muffin
Ingredients

Instructions
