TGIF hey! I know I’m a stay at home mom, however, I just can’t wait til weekends, always. Not that I can’t sleep in, chores done by itself, etc etc etc, mom’s life doesn’t stop just cause it’s weekend, but!!! I am just happy whenever I know, hey, it’s weekend 😁
I’ve been fermenting a lot of soybeans for tempeh lately, maybe we will have tempeh burger. Sunny weekends always call for BBQ 😍 How about you? Any plans for the weekend?
Sometime today I will be making lilac jelly. My husband grabbed me pectin yesterday. If I’m not lazy, today it is. Maybe tomorrow instead. While boys bbqing, I am jellying 🤣 Sounds like a plan.
For now, here is a delicious recipe. Easy to make, great as is, superb with warm rice 😊
500 g ground beef
1 large onion, slice
4 large garlic, slice
4 small-medium potatoes, cube
2 handful baby carrots, leave as is
1 can chickpeas, drain, rinse
1 can peas, drain, rinse
1 can corn, drain, rinse
1 bell pepper, slice
300 ml water, more or less depending if you’d like a little broth to your rice 😊
Chicken bouillon powder, to taste
1/4 tsp Turmeric powder
1 tsp Sweet paprika powder
2 1/2 – 3 tsp Ground cumin
A super generous pinch of White pepper powder (I may have mistakenly said black pepper in the video 😅)
Brown beef, stir in garlic and onion, cook for 1-2 mins, add in potatoes and carrots, stir and pour a little water. Cook til bubbly, covered, for 5 mins
Taken off lid, stir in chickpeas, corn, and peas, plus bell pepper. Pour in a little more paprika (again more or less depending how much broth you like to have)
Season, cover, and cook until carrots and potatoes are tender.
Enjoy as is or serve with rice.
