Hellooooo Sunshine!
I’ve been up since 4 AM sharp. Sunlight is just too bright to sleep more. Tossing around for close to an H, then I was like, fuck it, good morning to me it is 🤣 Cant sleep no more.
We do have blackout blinds, but the width are just not enough. Lights still come in from sides. If we purchase a wider blinds, they won’t fit the window. So yep eyes wide awake 😅 Summer is always fun. Can’t fall asleep early, not until 11pmish as there is sun outside still, always makes me feel it’s just wrong to go to sleep when it doesn’t feel like night time. Can’t sleep in much as the sun already waking you up around 3amish. So yep, I’m in a pickle whenever it’s Summer 🤣 And no, I don’t like eye cover. No matter how light it is, how silky it is, I just can’t use it. Doesn’t feel good on the eyes and head 😅😫😅😫 I’m weird, I know!
But hey, more up time means more baking and cooking time for me, more recipes to share. Yay 😁
My youngest will go for a study tour to Doig Reservation today, with his school. He’s been talking about it for days. He’s pretty excited. So I baked these muffins to be packed for the road 😊
1/4 c unsalted butter, melt
1/2 c flour
2 tbsp cinnamon sugar
1 tbsp coconut sugar
2 c flour
1/4 c coconut sugar (or brown sugar)
1/4 regular white sugar
1 tbsp BP
A generous pinch of salt
1 large ripe banana
1/2 c milk
2 eggs
1/2 tbsp lemon juice
1/2 tbsp vanilla essence
6 tbsp vegetable oil
Mix flour and sugars in a small bowl, stir in melted butter, creating crumbs, set to side
In a food processor, mix eggs, milk, banana, oil, juice and essence to a smooth consistency
In a bowl, mix flour, sugars, BP, salt, until completely combined, and make a well in center
Preheat oven to 400 F
Grease muffin pan, am using large muffin pan, of 6 muffin holes
Pour banana mixture into flour mixture, mix until just combined
Divide batter into 6 muffi holes, then top with the Crumb topping
Bake for 18-20 mins
