Hope you beautiful people are doing great today 😊 It’s cold for us this morning with wet snow still falling. I am grateful for this weather. Meh, but grateful. Here is hoping thr moistness will help to calm down the burning fires under the soil. I so do not want to have crazy Summer.
Here I am, at the parking lot of my youngest’s school, feeling cold inside the car, and yet all these young energetic people running around school area, with shorts. Wow. Yes, some with sweaters, some with toques and mittens, but some are only wearing shorts. I’d shiver so much 😅 My boys didn’t want any kinds of hats, but they asked for gloves. They do have their sweaters and pants on. While this momma? Yep, am hiding in the car. Cold outside 😁
For today’s recipe, I have a nice veggies stir fry. Simple, filling, and packed with protein.
1 block firm tofu
1 bag matchstix carrots
1 small purple onion
4 garlic
2 tbsp sunflower oil
2 eggs
1 bag bean sprouts
2 handful of spinach
Mushroom granules and vegetable rice (such as Vegeta powder, or Royco if you’re in Indonesia), to taste
Sesame oil to taste
A pinch white pepper powder
Cube tofu and place them on a nonstick pan, along with carrots
Slice onion and garli, also place them along with tofu and carrots
Add oil and saute for 5 mins
Crack eggs onto the pan and scramble
Stir in rinsed spinach leaves and rinsed beansprouts to combine
Season with vegetable rice, white pepper ground and mushrooms granules
Serve immediately with warm rice
