I did a lot of cooking today, 3 kinds of beef dish. My husband went shopping this morning and he got some discounts on nice beef cubes. So yeah, 1 turned one box into satay, 1 box into soup, and 1 box into coconuty beef. I will be sharing the recipes in coming days 😊
Then in the afternoon, we took the boys out for a walk to the forest. Not bad, 12K steps reached. Yay!
Needless to say, am very tired now. I haven’t truly sat down but now, and thought, hey, I haven’t shared a recipe for today. So here I am 😊 This following Indonesian dish is one of my favorites (yes, I have a lot of favorites. I love foods too much 🤣🤣🤣🤣)
700 g beef liver
Enough water
4 large potatoes
Enough olive oil
2 bags of sator (stinky beans)
5 garlic
1 medium onion
6 bird eye chilies
1 lemongrass
4-5 kaffir lime leaves
6 daun salam (Indonesian bay leaf)
300 ml water
At least 2 tbsp chicken bouillon powder (or to taste, if not a combination of sugar, salt, and MSG)
Boil beef liver in enough water for 8-10 minutes
Meanwhile, wash and cube potatoes
Once liver is cooked, slice into cubes
Heat enough oil (I use olive oil), fry potatoes
Using the same oil in the pot, fry cubed liver for 2 mins
Using the same oil in the pot, fry rinse stinky beans for 2 mins
In a blender, turn garlic onion, chilies, and 2 tbsp oil from the pot, into a fine paste
In a clean pot, dump paste, add lemongrass, bay leaves and lime leaves, saute til fragrant
Stir in liver, followed with potatoes and then stinky beans
Pour in water and season with chicken bouillon powder
Cook until all liquid gone
Enjoy with warm rice!
Sambal Goreng Kentang Ati
Ingredients
