I prepared the boys dessert like breakfast this morning. Thick sweet pancake from Indonesia that we would have as dessert there, however since mine isn’t as rich as what a street vendor would sell, it’s good for (sugar high) breakfast, I guess 🙉🙊🙈 Great mom, right 🤣🤣🤣🤣 In my defense, Canadian pancake is sweet too! Topped with syrup, fruits, cream, icing sugar, etc. Not that different 🤣✌️🤣✌️
In Indonesia this thick pancake is known as Martabak Manis, except in East Kalimantan, where I am originally from. We call it as Terang Bulan. The traditional filling in East Kalimantan would be black glutinous rice and/or chopped peanuts though, while throughout Indonesia, the majority would have chocolate rice and/or grated cheese and best is a combination of chocolate rice with grated cheese (YUMMO!) 😊 Street vendor style would be super rich, super sweet, super thick, and is prepared on a specific pan to make it.
1 c AP flour
6 tbsp rice flour
2 tsp sugar
1 tsp BP
1/2 tsp BSoda
A small pinch of salt
2 eggs
200 ml milk
1 tsp vanilla essence
Chocolate rice
Unsalted butter
Sweetened chocolate condensed milk
Mix dry in a bowl
Mix in wet ingredients
Mix til completely combined
Heat a pan on low-medium heat
Brush with butter
Pour 3/4 c batter on pan, close with lid, cook for 5 mins and/or until pores appear
Take off lid, sprinkle pancake with tiny pinch of sugar
Cook until surface no longer wet
Sprinkle pancake with chocolate rice, drizzle with condensed milk
Fold pancake in half, brush top with butter
Slice and serve

Terang Bulan (Martabak Manis)
Ingredients
- 1 c AP flour
- 6 tbsp rice flour
- 2 tsp sugar
- 1 tsp BP
- 1/2 tsp BSoda
