One day cloudy, one day sunny, here we go 🤣 The mood is up and down thanks to the weather. Moreover. My husband has been wanting to move to Nashvile, for forever it feels like. I keep saying no to him 😅 Then last year, he said what about Vancouver? I said maybe. But yikes, a cardboard house is around 1 million CAD. That’s cray cray. So decent house would be like an arm and a leg plus kidney, and our heads too! 🙉🙊🙈 So…we talked about moving to Calgary, until we learned, they are lacking schools there as well. Too many people, not enough schools. Heck. That’s like our tiny town! Lots of kids, bazillion of newcomers, not enough schools. Headache for parents. Guess we need to put the idea on the shelf again for now 🤣🤣🤣🤣 6 month long Winter, ladies and gentlemen. October to May. We are so lacking Vitamin D here 🙈🙊🙉 I’m easily sick, yikes! Maybe we should move to Malaysia. Somewhere tropical, with yummy food, abundant fruits, and tons of sunshine. Would be nice!
Speaking of yummy food. This following recipe am sharing, is a no hassle one, yet tasty. Normally I would add this and that, however, this time I was like, hmmmm let’s see if I make it simple, would be as tasty? Yep! I think from now on, this is how I will always prepare this following soup. So I get to safe some spices for other cooking that would need them more 😁
A dozen of boiled eggs
3-4 Chayote
1 bag of green beans
1 tbsp unsalted butter
4-5 garlic
1 can of coconut milk
2-3 cans of water
2-3 tbsp chicken bouillon powder
Peel boiled eggs from the skin, set aside
Peel chayote skin, rinse, then slice into finger length, set to side
Trim off green beans ends, slice, rinse, set to side
Thinly slice garlic
Melt butter and saute garlic til fragrant, then stir in veggies. Cook for 2 mins, then pour in coconut milk and water. Bring to boil until tender
Season with bouillon powder, drop in boiled eggs, cook for another 5 mins
Serve with rice or compressed rice cake (lontong/ketupat/buras)
