Hope this finds you well, friends ๐ I just woke up from nap. Long nap I must say ๐๐๐ I was food coma, but also dead tired. I started cooking and baking since before 9 AM, and done with everything plus feasting finally, before 4 PM. Then I died, and woke up like 10 mins ago ๐คฃ๐คฃ๐คฃ๐คฃ I made 2 meat dish, 1 soup, 1 cake, 1 dessert, and side dish too. Yep. Tons of dirty dishes to do throughout the time too ๐
Eid Al Fitr 2024 was a success. Yay!
I’m happy my boys enjoyed everything tho. Except the cake. It’s still chilling and resting in the fridge. We will slice it this evening ๐ I will be sharing all the recipes in the coming days, crossing fingers ๐ค
For now, let me share this following recipe ๐๐๐๐
Cookies
1 3/4 c flour
1 tbsp cornstarch
A pinch of salt
1/2 c unsalted butter
1/2 c sugar
1/4 c demerara style sugar
1 egg plus 1 yolk
1 tsp vanilla extract
Filling
Marshmallow puff
Coating
270 g semisweet choc chips
1 tbsp vegetable oil
Mix flour, salt, and starch in a bowl, set aside.
On a separate bowl, using electric mixer, cream/combine butter and sugars, then beat in eggs and extract
Beat in flour mixture a little at a time
Chill in the fridge for 2 H
Scoop dough per 1 tbsp, shape into disks, place on non stick cookie sheet
Bake cookies on preheated 350F for 8-10 mins
Cool on rack
Once cookies cooled, spread fluff on one, and sandwich with another cookie.
Melt choc chips mixed with oil in microwave at 30 secs intervals
Dip and coat cookie sandwich, and place on cooling rack
Enjoy once chocolate hardened (can speed this process in the fridge!)
