How’s going, friends? 2 more days left before back to work and I am battling stuffy and runny nose at the same time. Fudge! Can’t seem to escape cold and flu always and I hate Googling. Everything sounds scary 😅 Do you have health practitioners shortage where you at? We do. Big time. So cold, flu, whatever sickness, illness, issues, end up at ER instead family doctors as many don’t have family doctors and the ones who do, cannot see them but in 2-3-4-5-6 months wait time. By then, it’s no longer cold, but something else 😅
Self medicating can be frustrating. From home remedy to over the counter meds. Too many to try, too many to choose, and we have to be extra carefully with whatever. And in my household, we take vitamins, we juice a lot, we eat fruits like crazy, yet we still get sick now and then. Meh.
Enough ranting, let’s recipe sharing instead 😁
I have Smarties leftover Halloween that are good til June 2024, but consuming them as is gets boring sometimes. So I turned them into cookies. To make it seem healthier, I added walnut and chia seeds 😁 (a cookie or two won’t give you the flu, no? 😁😁😁😁)
30 boxes of Smarties mini
1/2 c walnut
1 1/4 c flour
1 1/4 tsp BSoda
A generous pinch of salt
1 c brown sugar
1/2 c unsalted butter, room temperature
2 squares dark chocolate
1 tbsp vanilla essence
1 egg
1 tbsp chia seeds
1/4 c mini semi sweet chocolate chips
Unbox Smarties into a bowl, set aside
Chop walnut, set aside
Mix dry ingredients in a bowl, set aside
Melt chocolate squares, set aside
Cream butter and sugar, beat in an egg, continue creaming. Beat in vanilla essence and melted chocolate.
Add in dry ingredients, a little at a time, then fold in Smarties, mini chocolate chips, walnut and chia seeds
Drop cookie dough per tbsp/per cookie scoop/per ice scream scoop, on greased sheet
Bake cookies on preheated 350 F for 8-10 mins, depending on your oven. Cool on rack.
Triple Chocolates Walnut Cookies
Ingredients
