Happy Saturday, Friends!
Another gloomy, smokey, red sun day here. The four of us went for a walk at 6 am earlier, and glad we did as the smokey smell wasn’t that bad yet. My 9 yo has been sad lately, due to it. He said and I quote, “Doesn’t feel like Summer at all. Morning is cold but at the same time smoggy. I can’t jump on my trampoline. I am sad”. Broke my heart hearing that.
This Summer, we haven’t been able to cook outside as well. We normally would prepare Hungarian soup cooked in our kettle, above open fire. We would make Smores and whatnot. We also haven’t open up our tent, for camping in the backyard.
Luckily, we can have our sleeping bags in the media room, have movie night and just sleep on the floor, pretending to be camping, and we can still use the stove and oven to prepare the foods, like this following meatloaf 😉
1 onion
1 can chili style bean
1 kg ground beef
2 eggs
2 tbsp mushroom granules (optional)
Ground cumin to taste (optional)
Dice the onion, place it into a bowl.
Add in the beans, ground beef, and eggs. Mix well.
Bake on preheated 350 F for 1.5 H

My oldest had his with mashed potatoes, my youngest with fries, while my husband and I had ours with coconuty veggies salad 😍
