Hope you’ve been well. My household? Not so much, meh. My husband has been sick with the flu since last Wednesday. I caught the cold on Friday. Today is Tuesday and he is still not well. As for me, I am back at work since Monday 😁
The weather’s been weird, it doesn’t feel like Winter most days. Yes we have Snowy days now and then, but it’s been warm that everything just muddy, then turned to ice, back to mud again, ice again, over and over, for the past 2 weeks. I so hope it stays kinda warm like this until near Christmas 🤣🤣🤣🤣

Today’s recipe is bell pepper stew. In Hungary we call it Lecso. We don’t normally add ground beef to our Lecso back in Hungary, but we are in Canada now, so we do 😁😁😁😁
1 bag of bell pepper (8-9 inside)
5 tomatoes
800 g ground beef
1 small-medium onion
2 tbsp of vegetable oil
Vegeta powder to taste
1 tbsp sweet paprika powder
Slice bell pepper, discard seeds. Slice onion, and set aside.
Place tomatoes into a large bowl, and pour in hot boiling water. Let stand for 3-5 mins.
Brown beef, set aside, pour away the fat.
Saute onion until soften, then stir in bell pepper, cover with lid, cook on low-medium heat. If needed, pour in a little water, so bottom won’t dried up.
Meanwhile, peel skin off tomatoes, and chop the tomatoes.
Take off lid, stir in chopped tomatoes. Cook for 1-2 mins.
Stir in browned ground beef followed with seasonings. Pour in a little water if needed
Close lid, continue cooking on low-med heat, until bell pepper and tomatoes super tender.

Ground Beef Lecso
