It’s almost back to school here. Long weekend for us, as Monday is Labor Day, however, school starts the right next day. I think it’s kinda nice that Labor Day is most of the times fall on a day before back to school, here in BC. Gives us parents a chance to spend the full day with the kids before sending them to school 😁
Many people left for camping since Friday, however wind has been crazy strong, and bringing back the smokes from the wildfires. Sky’s been meh and sun is red. That could only means befriending my asthma puff 😔 Been hard to breath, meh.
I prepared this following soup for my boys. It’s Indonesia-style chicken soup with macaroni pasta in it, however, once cooked, it is served with rice 😁
500 g chicken bones
20 pieces meatballs, slices
3 green onions, thinly sliced
Baby carrots, 10-15, slice
Baby potatoes (mixed), 10-15, slice
Macaroni pasta, 1 heaping cup
1/4 of large onion
5 garlic
White pepper powder, to taste
Vegeta powder, to taste
Mushroom granules, to taste
Make a smooth paste out of onion and garlic, with a little water if needed, set aside.
Boil chicken bones in water (half pot), until foamy. Remove the scum foam, then add in macaroni. Cook until half cooked.
Add in veggies, keep boiling until veggies half cooked, then add in green onion, followed with meat balls.
Season.
Once veggies and macaroni tender, soup is ready to serve with warm rice.
