How’s the weather on your end? Golden leaves are almost gone here due to the strong winds for the past couple of days. Things shifting rather too quickly in such a short time. I have yet the time to drain and wash the pool 😬
The majestic northern lights been greeting us though. Night sky has been beautiful. Smokey days on and off still, however.
Actually, in short, I just wanted to say, I am not looking for Winter 🤣🤣🤣🤣
Today’s recipe share is Banana Muffins! This super simple muffins, can either be steamed or oven baked! 😊
1 egg
1/2 c dark brown sugar
1/4 c peanut oil
3 ripe bananas
1 1/2 c flour
1 tsp BP
1/2 tsp BSoda
A pinch of salt
1/2 c choc chips
1/2 c sliced almonds
1 envelope of instant oatmeal (dr. Oetker) – regular
Mix sugar, oil, and egg in a bowl. Using balloon whisk, mix til combined.
Add in bananas, mash with a fork, mix until combined
Mix flour and dry ingredients in a bowl, then dump mixture into wet ingredients. Mix with spatula.
Stir in choc chips, almond slices, and oatmeal.
Spoon into paper cups.
Steam for 20 minutes or bake at preheated 350 F for 12-18 minutes

Ingredients
