It truly is a happy one for my household. Last week I decided to move on from my current job, I applied a new one, and yesterday I accepted an offer 🤩 So, today we are celebrating for the good news. Here is crossing fingers the future will be brighter from now on 🤩🤩🤩🤩
My mother in law is flying home, back to Europe tomorrow. She is sad, understandably. So today we are not just cooking tons of food, but will also go out for treats a bit later 😁
For now, let me share you this following cake from Hungary, called Rizskoch. It’s made of rice. They love serving it topped with sweet sauce or syrup, I like it as is once chilled.
3 c rice, half cooked
Milk, 1/4 c milk plus 2 c whole milk powder + 3 c water
3 heaping tbsp sugar
1 vanilla sugar
3 yolk
3 egg white
1 c or more of raisins
1/4 – 1/3 unsalted butter
Unflavored bread crumbs for sprinkling
Sauce of your choice (vanilla sauce or Raspberry syrup)
1st, mix whole milk powder with water in a bowl
Place half cooked rice in a pot, non stick if you have, then pour in 1/4 c of milk, cook on low-medium heat
While cooking, stirring continuously, while adding milk a laddle at a time. Continue cooking and adding milk, until rice is fully cooked
Take off from heat, add in yolks, stir in butter wooden spoon
Add in vanilla sugar, sugar, butter, mix well
Beat egg white until stiff then add into rice mixture, stir
Add in raisins, stir well
Dump mixture onto parchment lined rectangular pan
Sprinkle with crumbs
Bake on preheated 350 F for 40 mins
Serve with your sauce or syrup, if you like (I like resting it for a couple for hours on the fridge, sugar with settled and sweet enough without any sauce or syrup!)
