How’s your Sunday so far? My household is battling the cold. Seems like it happens a lot in this house. Thos… I mean MY school kids are like petridish, always bringing home cold virus 😅 None of us went to work nor school on Friday. While I feel better now, most likely my boys will still stay at home tomorrow. Their cough and snorts are just too much to send them to school 🤪
Good thing is, Summer break next week. Crossing fingers no sickies til Winter comes 😁
Today’s share is Indonesia style pancake. They are most of the times are offered by street vendors. Yes, we can prepare it at home, but somehow, it’s best when we don’t have to 🤣 Yep. Lazy mama, here. It is thick pancake and is called Martabak Manis a.k.a Terang Bulan.
(And yes! Indonesians do like the filling of a mixture of grated cheese AND chocolate sprinkles!)
2 3/4 c flour
2/3 c sugar
1/2 tsp BP
5 tsp rapid instant yeast
A pinch of salt
3 eggs
2 c of whole milk, just slightly warm (not even lukewarm)
Cooking spray or butter
Sugar
Grated cheese
Sweetened condensed milk
Chocolate sprinkles (milk and chocolate based)
Melted butter
Mix dry ingredients in a bowl, set aside
Crack eggs, slightly mix them with a fork
Pour eggs into dry ingredients, followed with milk
Cover and let rest until doubled in size
Heat pan on super low heat and grease with cooking spray or butter
Pour half of batter, close lid, cook until holes appear
Sprinkle with sugar and let cook for another 2 mins
Place pancake on cutting board, sprinkle with cheese or chocolate or a mix
If you want, drizzle condensed milk on the filling
Fold and brush with melted butter
Slice and serve immediately
Yummo! (But yes, tons of calories!)
Terang Bulan (Martabak Manis)
