Our days are still smoggy as wildfires keep popping left and right, and most caused by person – BC Wildfires site states. It is so unbelievable how some can be so ignorant with whatever they do that can cause acres and acres to burn out of control. I can’t imagine to be one of the people that have to be evacuated, or the firemen, not to mention animals that don’t know where to run for safety.
Yesterday, kids and schools contacted parents, as smokes so thick, even in classrooms, and some kids gotten ill, could hardly breath and eyes hurting. Even us at work been feeling those as well, imagine kids 😬
It’s been wild here, with the wildfires 😬
The other week I made some quiche for my sons lunch boxes. They are simple to prepare, easy to make, and they are good at room temperature or served warmed 😊
Crust
1 1/2 c flour
1 tsp sugar
A generous pinch of salt
1/2 c peanut oil
2 heaping tbsp heavy cream
Filling
2 tbsp unsalted butter
At least 5 green onions
3 eggs
Black pepper ground, garlic powder, nutmeg powder and salt, to taste
1 c heavy cream (or 1/2 c heavy cream plus 1/2 c milk/water)
1/2 – 1 c grated cheese
Make all crust ingredients in a bowl, and form a dough. Pinch a dough the size of large marble, press on muffin pan, bottom to side up, set aside
Slice thinly green onion and melt the unsalted butter, set aside
Beat eggs, and stir in the rest of the ingredients. Pour batter onto crust, using a small ladle.
Bake in preheated 350 F for 25-30 mins, depending on your oven.
