3 days of smoggy situation here. Wild fires from our neighboring towns, as close as only 30 mins away. They are on evacuation orders, scarily ☹ It is so bad out. The sun has been red, the sky has been gloomy, and the air is thick with smoke smells. It’s windy today, so it’s not helpful at all. This is the only time when I want it to rain so badly 😬 On another note, our emergency bags are ready, just in case. I think almost every year, we have this situation, but not this close 😬😬😬😬
This following soup is from Jakarta, Indonesia. Originally, you would need cow’s lungs and tripe to make this soup more authentic, but gosh, they are not easily available where I reside, so I use only beef cubes in the soup. Still yummo though and my oldest approved 😍
5 candlenuts (no subs)
A thumb of ginger
1 large onion
6 garlic
2 tbsp peanut oil
1 tsp nutmeg powder
1 tsp ground coriander
1/8 tsp cinnamon powder
1/4 tsp galangal powder
1 kg beef cubes
2 lemongrass
6 kafir lime leaves
3 Indonesian bay leaves (daun salam)
8 cloves
1 can coconut milk
Chicken bouillon powder to taste
1/4 tsp white pepper powder
300 ml water
500 ml beef broth (liquid should be up to 2 L)
MSG, optional
For Serving
Warm rice
Fried onion
Boncabe (Indonesian flavored cayenne pepper powder)
Melinjo chips (Gnetum gnemon)
Make a spice paste of candlenuts, ginger, onion, garlic and peanut oil.
Dump paste on non stick pan, saute until fragrant with cinnamon, nutmeg, coriander, and galangal powder.
Using IP, saute option, brown beef cubes, and drain. Place beef back into IP, keep sauteeing, and stir in spice paste.
Stir in lemongrass, kafir lime leaves, and daun salam, plus cloves.
Pour in broth, coconut milk, and water.
Season with bouillon powder, white pepper and MSG if using. Turn on saute option, place on lid, click soup option.
Serve soup with rice, fried onion, and melinjo chips. If you like spicy, sprinkle with Boncabe.
