How’s Going?
I am in between anxious, excited, and worried. Counting days til I fly to Indonesia, visiting my family, however, too many bad news regarding air travels these days, make me worried of not so smooth sailing for us 😬 Hopefully no delays nor cancelation, here is crossing fingers to that!
I had a 3 H long nap today. After 2 weeks or so dealing with sickness in the house, a much needed nap it was. As much as I love naps, they make me groggy instead feeling fresh tho 😅😬😅😬
Today I baked a banana bread. I have been baking 3 banana breads throughout the week. The boys love this particular banana bread and now that their appetite is back, it’s a wonderful feeling making something that they requested again and again, regardless it’s close to 9 PM and I’m only done baking like 12 mins ago 😅😁😅😁 But whatever, 3 H naps today yo! 🤣🤣🤣🤣
3 bananas
1/3 c peanut oil
1/4 c whole milk
2 eggs
2 c flour
1 c sugar
2 tsp BP
A generous pinch of salt
1/3 c raisins
1/3 c semi sweet chocolate chips
1/2 c chopped walnuts
Mix banana, oil, milk in food processor, then mix in 2 eggs, set aside
Mix flour, sugar, BP and salt in a bowl, pour in wet ingredients, to just combine
Fold in raisin, choc chips and walnuts
Bake on preheated 350 F for 40-55mins depending on your oven or until knife inserted comes out clean (using silicon normally as given times, however with aluminum baking pan takes longer).
See ya!
