My new coworker is from The Philippines and she loves indulging me with Filipino sweets, like this following sweet, a cross between cookie and cake, Filipino style coconut macaroons. Sooooo good!
1 bag of sweetened desiccated coconut (14 oz)
1/2 c unsalted butter
1/2 c brown sugar
3 eggs
1 can sweetened condensed milk (14 oz)
Mash butter with fork until creamy then add in sugar, mix well
Add in eggs followed with condensed milk stir super well until combined
Stir in coconut
Pour batter into mini cupcake mold lined with mini cupcake paper
Bake on preheated 370 F for 20-30 mins, or until golden brown
