For 3 days now we are back to chilly, wet, cold, cloudy days. Yesterday the pipe of of our sump pump cracked, due to cold, warm, back to cold, warm, more cold days, whiplash temperatures. So when it was a bit warmer, snow melting, with cracked pipe, for sure chaos. Meh. My husband quickly drove to the store to purchase new pipes, late afternoon, and they were not light in the pocket, obviously. So while I was having fun potting plants, he was definitely not having fun, dealing with sump pump ????
I miss gardening, big time. Winter is a long one in the North, so my escape is to garden inside ? Buying, planting, potting, indoor plants. The ones that are air purifying, mostly. Unfortunately, most of them are not pet friendly. But let’s talk about this more, some other time.
For now, let’s share a sweet recipe. Cannot wait for Summer, Margarita Bars ????
Base
2 c enriched flour
1/2 c sugar
1 c unsalted butter
Topping
2 tbsp tequila
1 tbsp Cointreau
1/2 c lime juice
4 eggs
1/4 c enriched flour
1 tsp BP
Super generous pinch fine sea salt
2 limes
1 1/2 c sugar
For Serving
2 tbsp icing sugar
Yah! You read right, tons of sugar, BUT, who eats the whole tray???? ?
Slice them teeny tiny, and you will be just fine ?

Margarita Bars
Ingredients
Base
- 2 c enriched flour
- 1/2 c sugar
- 1 c unsalted butter
Topping
- 2 tbsp tequila
- 1 tbsp Cointreau
- 1/2 c lime juice
- 4 eggs
- 1/4 c enriched flour
- 1 tsp BP
- Super generous pinch fine sea salt
- 2 limes
- 1 1/2 c sugar
Serving
- 2 tbsp icing sugar
Instructions
- In a bowl mix the base ingredients, cut in butter, into crumbly texture
- Dump onto parchment lined baking pan, press mixture nicely covering the pan
- Bake 30 mins, on preheated 350 F
- In a bowl, mix tequila, Cointreau, and lime juice
- In another bowl, mix flour, BP, grated lime wedges, salt, and sugar
- Crack in eggs into the bowl, mix with electric mixer until well combined
- Pour in liquor mixture, blend to just combine
- Pour mixture onto baked base
- Bake for 25-30 mins
- Take out, cool completely, slice, sprinkle with icing sugar and serve
