I am home today as it is Family Day here in BC, Canada, so no school nor work 😍 Too bad tomorrow’s craziness will resume. Won’t it be nice if we could just stay at home, nap and be lazy, yet come paycheck time, we see $$$$ in our bank statement 🤣🤣🤣🤣 Who’s with me???? 🤪🤣🤪🤣
I mean, okay, that is just a dream, but at least give us a better weather Sure life has to return to what it is before the long weekend, but it would surely be much nicer if Winter dies down already. Today is another -36 C here. Long weekend but stuck at home thanks to the extreme cold, how fun….NOT 😅🤣😅🤣
Today’s recipe is to battle this coldness. A delish egg drop soup!
4 cans of chicken broth
1 tin of sweet corn kernels
4 eggs
1/2 tbsp garlic powder
1/4 tbsp ginger powder
Sesame oil to taste
Chives
Ground white pepper to taste
3 tbsp cornstarch

Egg Drop Soup
Ingredients
- 4 cans of chicken broth
- 1 tin of sweet corn kernels
- 4 eggs
- 1/2 tbsp garlic powder
- 1/4 tbsp ginger powder
- Sesame oil to taste
- Chives
- Ground white pepper to taste
- 3 tbsp cornstarch
Instructions
- In a bowl, beat 3 eggs plus 1 yolk
- In a separate bowl, beat 1 egg white
- On a separate bowl, dilute cornstarch with a little broth
- In a pot, bring to boil broth, season with garlic, ginger powders, sesame oil and ground white pepper
- Once boiling, drop in the corn kernels
- Using for, drop in beaten eggs, creating strains of eggs, followed with beaten egg white
- Thickened with cornstarch solution
- Add in chives
- Serve immediately
