Altho not so good for us atm, as it is snow storm. We just can’t catch a break it seems. After freezing spell, now forecast says it will be snowing for days. Meh! Big meh! ???? Predicted tho. When weather is warming up, it often means snow is coming. But what is warming up when it’s -28 C, right ????
For today’s recipe, am sharing 3 recipes as one as they are to be served together ?
Rabbit Stew (Nyulpaprikas)
1.5 kg rabbit
1 onion
2 bell pepper
2 tomatoes
1 L water
3 tbsp grapeseed oil
3-4 tbsp paprika powder
Seasoning to taste
Spaetzle (Nokedli)
2 c enriched flour
2 eggs
4 tbsp grapeseed oil
250 L water (watch the vlog)
1/2 tsp of salt
Water for boiling
Salt to taste
Cucumber Salad (Uborka salata)
2 cucumbers
Sugar, salt, vinegar to taste
Enough water
Garlic (optional)
Addition
Sour cream

Ingredients
Stew
- 1.5 kg rabbit
- 1 onion
- 2 bell pepper
- 2 to matoes
- 1 L water
- 3 tbsp grapeseed oil
- 3-4 tbsp paprika powder
- Seasoning to taste
Spaetzle
- 2 c enriched flour
- 2 eggs
- 4 tbsp grapeseed oil
- 250 L water watch the vlog
- 1/2 tsp of salt
- Water for boiling
- Salt to taste
Cucumber Salad
- 2 cucumbers
- Sugar salt, vinegar to taste
- Enough water
- Garlic optional
For Serving
- Sour Cream
Instructions
Making The Stew
- Cut up rabbits, rinse
- Heat oil, saute onion until soften
- Take off from heat and quickly stir in paprika powder
- Put pan back on heat
- Stir in rabbit to coat
- Cook until whiteish
- Pour in water
- Add in tomatoes and bell pepper
- Bring to full boil for 5 mins, do not stir
- Turn down heat to simmer
- Keep cooking until meat is cooked and tender
Spaetzle
- Mix everything
- Pour in water until the right consistency, not too runny, not too thick
- Bring a pot of water to boil, stir in salt
- Drop in batter
- Cook until floating
- Strain
Salad
- Slice thinly cucumber, place into a bowl
- Add water and seasoning, chill before serving
Rabbit Stew
- Check back on the rabbit
- Once the rabbit is cooked, turn up the heat to boil fully and keep boiling until broth is way less
- Season
Serving
- Serve stew with spaetzle and cucumber salad, topped with sour cream
